Ingredients:
– 2 raw mangoes, peeled and chopped
– 1/2 cup sugar
– 1/4 cup vinegar
– 1/4 tsp salt
– 1 tsp ginger paste
– 1 tsp red chili powder
– 1/4 tsp roasted cumin powder
Instructions:
1. In a pan, combine the chopped mangoes, sugar, vinegar, salt, ginger paste, and red chili powder. Mix well.
2. Heat the mixture on medium heat for about 10-15 minutes or until the mangoes are soft and cooked. Stir occasionally to prevent sticking.
3. Turn off the heat and let the mixture cool down.
4. Once cooled, blend the mixture until smooth using a blender.
5. Transfer the blended mixture back to the pan. Add the roasted cumin powder and mix well.
6. Cook the chutney on medium heat for another 5-10 minutes or until it thickens to your desired consistency.
7. Let the chutney cool down completely before transferring it to an airtight container.
