How to make Tomato Pickle

Ingredients:

1 kg tomatoes
1 tbsp cumin seeds
1 tbsp coriander seeds
1 tbsp mustard seeds
1 tsp fenugreek seeds
1/2 tsp nigella seeds
1/2 tsp fennel seeds
1 tsp red chili powder
1 tsp turmeric powder
1 tsp salt
1/4 cup oil
1/4 cup vinegar

Instructions:

1. Wash and dry the tomatoes, then cut them into small pieces.
2. Heat a pan and dry roast cumin seeds, coriander seeds, mustard seeds, fenugreek seeds, nigella seeds, and fennel seeds until fragrant.
3. Let the spices cool down and grind them into a fine powder.
4. In a mixing bowl, add the chopped tomatoes, spice powder, red chili powder, turmeric powder, and salt.
5. Mix everything well and set aside for a few hours.
6. Heat oil in a pan and add the tomato mixture into it, cook for 10-15 minutes until the tomatoes are soft.
7. Turn off the heat and let the mixture cool down completely.
8. Add vinegar to the tomato mixture and mix well.
9. Transfer the achar to a clean and sterilized jar and keep it in the sun for two days.
10. Your delicious tamatar ka achar is ready to be served. Enjoy with any meal or snack.
