Kache aam ka achar is a popular Indian pickled dish made with raw mangoes and a blend of spices. Here’s a simple recipe that you can follow to make it at home:
Ingredients:
– 2 medium-sized raw mangoes
– 2 teaspoons mustard seeds
– 1 teaspoon fenugreek seeds
– 1 teaspoon nigella seeds
– 1 teaspoon fennel seeds
– 1 teaspoon cumin seeds
– 1/2 teaspoon turmeric powder
– 2 teaspoons red chili powder
– 1 tablespoon salt
– 2 tablespoons mustard oil
Instructions:
1. Wash and dry the mangoes. Peel off their skin and cut into small pieces.
2. In a small pan, dry roast the mustard seeds, fenugreek seeds, nigella seeds, fennel seeds, and cumin seeds until they turn brown.
3. Grind the roasted spices into a fine powder.
4. In a mixing bowl, combine the mango pieces, powdered spices, turmeric powder, red chili powder, and salt. Mix well.
5. Transfer the mixture into a clean and dry glass jar.
6. Heat the mustard oil in a pan until it starts to smoke. Remove from heat and let it cool down.
7. Pour the cooled oil over the mango mixture in the jar.
8. Secure the lid tightly and shake the jar well to mix everything together.
9. Keep the jar in direct sunlight for 3-4 days to allow the pickle to mature.
10. Your kache aam ka achar is ready to eat! Serve it with roti, paratha or rice.
Note: The pickle will last for several months if stored properly in a cool and dry place.
