Kacche aam ki chutney is a popular Indian condiment made with raw mangoes, spices, and sugar. It is typically served as a side dish to complement savory dishes such as samosas, chaat, and parathas.

Ingredients:
– 1 raw mango, peeled and grated
– 1 small onion, finely chopped
– 1 green chili, finely chopped
– 1 tsp cumin seeds
– 1 tsp mustard seeds
– 1 tsp coriander powder
– 1/2 tsp red chili powder
– 1/4 tsp turmeric powder
– 1/4 cup sugar
– Salt to taste
– Water as needed
– 1 tbsp oil

Instructions:
1. In a pan, heat oil over medium heat and add cumin and mustard seeds. Let them splutter.
2. Add chopped onions and green chili and sauté until onions turn translucent.
3. Add grated raw mango, coriander powder, red chili powder, turmeric powder, and salt.

5. Add sugar and water and continue cooking until the chutney thickens.
6. Turn off the heat and let the mixture cool down.
7. Once it has cooled, blend it in a mixer or food processor until smooth.
