Hari mirch ka achar is a spicy and tangy pickle made using green chillies. It is a popular condiment in Indian cuisine and is usually served with meals to add heat and flavor.
Ingredients:
– 250g green chillies
– 2 tbsp mustard seeds
– 1 tbsp fenugreek seeds
– 1 tsp cumin seeds
– 1 tsp fennel seeds
– 1 tsp nigella seeds
– 1 tsp turmeric powder
– 2 tbsp red chilli powder
– 2 tbsp salt
– 1 cup mustard oil
Instructions:
1. Wash the green chillies thoroughly and pat dry them completely.
2. Slit each green chilli vertically in half, leaving the stems intact.
3. Roast the mustard, fenugreek, cumin, fennel, and nigella seeds in a pan for 2-3 minutes until fragrant.
4. Once done, let them cool down and grind them coarsely.
5. In a bowl, mix together the spices (mustard-fenugreek-cumin-fennel-nigella mix, turmeric powder, red chilli powder, and salt).
6. Stuff the green chillies with the spice mix by gently pressing it into the cuts and crevices.
7. Heat the mustard oil in a pan until smoking hot and then turn off the heat.
8. Let the oil cool down for 5-10 minutes and then pour it over the stuffed green chillies.
9. Cover the jar with a tight lid and keep it aside for 2-3 days to pickle.
10. Give the jar a good shake every day to ensure that the spices are evenly distributed.
11. After 2-3 days, the pickle will be ready to eat. Store it in an airtight jar in the refrigerator.
