Kathal ki sabzi is a popular dish from the northern part of India made with raw jackfruit. Here’s a recipe to make it:
Ingredients:
– 1 small raw jackfruit (kathal), peeled and chopped into small pieces
– 1 onion, finely chopped
– 2 tomatoes, chopped
– 2-3 green chillies, slit lengthwise
– 1 tsp ginger paste
– 1 tsp garlic paste
– 1 tsp cumin seeds
– 1 tsp coriander powder
– 1/2 tsp turmeric powder
– 1 tsp red chilli powder
– Salt, to taste
– Oil, for cooking
– Coriander leaves, chopped for garnish
Instructions:
1. First, prepare the jackfruit by removing the outer thorny layer, cutting it into small pieces and washing it well.
2. In a pan, heat some oil and add cumin seeds. Once they start to crackle, add onions and green chillies and sauté until onions turn golden brown.
3. Add ginger and garlic paste and sauté for another minute.
4. Next, add chopped tomatoes and all the spices – coriander powder, turmeric powder, red chilli powder and salt. Mix well and cook until the tomatoes become soft and mushy.
5. Add the chopped jackfruit and mix everything well.
6. Cover the pan and let the jackfruit cook on low-medium heat for about 20-30 minutes, until it becomes tender.
7. Give everything a final mix and garnish with coriander leaves.
8. Serve hot with rice or roti.
