Rava idli is a popular South Indian breakfast dish made with semolina (rava), yogurt, and baking soda. It is a quick and easy recipe that does not require any fermentation like traditional idlis. The batter is prepared by mixing rava with yogurt and adding water to make a smooth and thick batter. Then, the baking soda is added and mixed well. The batter is poured in the idli molds and steamed until cooked. Rava idli can be served with coconut chutney or sambar.
Ingredients:
1 cup fine rava
1 cup curd
1/4 cup grated carrot
1/4 cup grated coconut
1/4 cup finely chopped coriander leaves
1 tsp mustard seeds
1 tsp urad dal
1 tsp chana dal
1 tbsp oil
1/2 tsp baking soda
Salt to taste
Method:
1. In a pan, heat some oil and add mustard seeds. When they start popping, add urad dal and chana dal.
2. Add the rava and roast it until it turns light golden brown.
3. Transfer the roasted rava to a mixing bowl and let it cool down for 5 minutes.
4. Add curd and mix well to remove any lumps.
5. Add grated carrot, grated coconut, coriander leaves, and salt. Mix well.
6. Add water little by little to make a thick batter. Keep it aside for 10 minutes.
7. Grease the idli plates with oil.
8. Heat water in a steamer or pressure cooker.
9. Add baking soda to the idli batter and mix well.
10. Pour the batter into the greased idli molds.
11. Place the molds in the steamer or pressure cooker and steam for 12-15 minutes.
12. Turn off the flame and let the idlis rest for 5 minutes before taking them out of the molds.
13. Serve hot with coconut chutney and sambar.
