Kulcha is a type of flatbread which is popular in the Northern part of India. It is made of maida flour, leavened with yeast, and has a slightly sweet taste.
Ingredients:
1 cup maida flour
1/2 tsp dry yeast
1/2 tsp sugar
1/4 cup curd
1 tbsp oil
Salt to taste
Water as required
For the stuffing:
1/2 cup grated paneer
1/4 cup chopped onions
1/4 cup chopped green bell peppers
1/4 cup chopped tomatoes
1 tsp minced ginger
1 tsp minced garlic
1/4 tsp red chilli powder
1/4 tsp garam masala powder
Salt to taste
Method:
1. To make the kulcha dough, mix together the maida flour, yeast, sugar, curd, oil and salt in a bowl.
2. Add enough water to make a soft dough.
3. Knead the dough for 10 minutes until smooth.
4. Cover the dough and let it rise for 1-2 hours.
5. To make the stuffing, mix together all the ingredients in a bowl.
6. Preheat a griddle or tawa over medium heat.
7. Divide the dough into 12-14 equal portions.
8. Roll each portion of dough into a thin circle.
9. Place 2-3 tablespoons of the stuffing in the centre of the dough circle.
10. Bring the edges of the dough together to enclose the stuffing and form a ball.
11. Pinch the edges of the ball to seal well.
12. Flatten the ball slightly.
13. Place the kulcha on the preheated griddle or tawa.
14. Cook for 2-3 minutes until golden brown and crisp.
15. Serve hot with chole or paneer butter masala.
