4-5 Boiled potatoes (4-5 उबले हुए आलू ) 4-5 tbsp Rice Flour (4-5 चम्मच चावल का आटा) Salt as per Taste (स्वादनुसार नमक) 1 Tsp Dry Mango Powder( 1 चम्मच अमचूर पाउडर) 1Tsp chilli flakes (1 चम्मच कुटी लाल मिर्च) 1/4 Tsp Asafoetida (1/4 चम्मच हींग) 1 Tsp Garam masala (1 चम्मच गरम मसाला) 1 green chilli finely Chopped (1 हरी मिर्च बारीक़ कटी हुई) Fresh Coriander (हरा धनिया)
Recipe Crispy Aloo Tikki
Step 1 – Mash boiled Potatoes with fork/masher
Step 2 – Add Garam Masala, mango powder,Hing, Green Chilli, chilli flakes, Salt, Fresh Coriander, Now add Rice Flour and mix well forming a soft dough. Everything mix really well and tikkis dough ready
Step 3 – rest the dough for 10 minutes.
Step 4 – Mix again the dough
Step 5- Take a ball and then press gently to make a tikki. Make all the tikki in the same manner.
Step 6 – Aloo Tikki ready to fry
Step 7- Heat oil for frying the tikki in a pan. the oil is hot, add the tikki
Step 8 – Fry on Low heat until tikki are browned and crisp from all the sides.
Step 9- one side is crispy and golden, gently flip each tikki with a spatula.
Step 10 – Fry the second side till crispy and golden. You can gently flip once or twice more till the aloo tikki are golden and crisp evenly.
Step 11 – Aloo Tikki Ready . Transfer prepared tikkis to a plate.
step 12 – Enjoy Aloo Tikki with Tomato Sauce /green chutney
